Chocolate Ricotta "Moose"
This is one of our most often requested recipes. It makes a foolproof, almost instant, rich and velvety dessert.
3 ounces unsweetened chocolate, melted
1 pound ricotta cheese
1 cup heavy cream, whipped with a
1 teaspoon pure vanilla extract little vanilla and maple syrup
honey to taste (about 1/3 cup) fresh fruit or shaved chocolate
Blend the melted chocolate, ricotta cheese, vanilla, and honey in a blender or food processor until very smooth. Pour into dessert cups and chill.
To serve, mound whipped cream on top and garnish with a fresh, ripe strawberry, a few raspberries, an orange or kiwi fruit slice, or shaved chocolate.
